Israeli Salad

We just celebrated Passover with friends at our church (yes, you read that right). Our buddy, Gabe, made a traditional Israeli salad I thought I would share with you. It was amazing! So simple, too!


This recipe is vegan, kosher, and pareve. It’s super simple: cucumbers, tomatoes, parsley, olive oil, lemon juice, and onion.


What you need:

*1 lb cucumbers, diced

*1 lb fresh, ripe tomatoes, seeded and diced

*1/3 cup minced onion

*1/2 cup minced fresh parsley

*3 tbsp extra-virgin olive oil

*3 tbsp fresh lemon juice

*salt to taste


Combine all ingredients, serve, and enjoy!
