The Bomb Avocado Salad

This photo and recipe comes from Julia's Album and it is an epic explosion of awesomeness in your mouth. It's so good, I had to share it here. I'm drooling just looking at the picture, thinking of how I cannot wait to enjoy this salad again soon. We seriously have eaten it on a weekly basis since we tried it. It's Heavenly.


INGREDIENTS


1/2 pound yellow cherry tomatoes or grape tomatoes, halved

2 avocados, diced

1 cucumber, sliced

1/3 cup red onion, diced

8 ounces small fresh mozzarella cheese balls

Basil pesto.


Basil pesto dressing:


1/4 cup of fresh basil pesto

1 tablespoon of lemon juice


Add the lemon juice to the pesto, mix well. Toss all ingredients. Season with salt and pepper to taste. Inhale. Salivate. Savor. Sigh with contentment.
